What They Are:
A cookie wrapped up in a warm pie crust. It makes for a delicious hand-held treat that everyone can enjoy!
What You Need:
-Cookie Dough (any kind, can be pre-made or homemade)
-2 ½ cups of flour
-1 cup of unsalted butter, cold
-1 teaspoon of salt
-1 teaspoon of sugar
-8 tablespoons of ice cold water
What to Do:
1) Bake the cookie dough halfway, allow it to cool and set aside
2) Preheat the oven to 350 degrees
3) Make your pie crust by mixing the flour, salt, and sugar
4) Next, mix in cubes of the butter, until it is all added; the mix should be a coarse consistency
5) Add in the water, a tablespoon at a time, until a doughy ball is made
6) Roll out the dough using flour
7) Take a circular piece about 5inches in diameter, and make sure its nicely flattened
8) Take one of the cookie dough balls and put it in the middle of the pie dough
9) Fold over the pie dough and press the edges together
10) For a decorative touch, use a pastry wheel to cut around the edges
11) Put pies on a greased pan, and place in the oven for about 20- 25 minutes or until golden brown
12) Allow them to cool, and eat

These cookie pies were really good! I sampled one with oatmeal chocolate chip cookie dough inside, and it was perfect because the pie crust helped to contain all the chocolaty goodness that otherwise would’ve been all over my hands! Additionally, the piecrust, which is shaped more as a pouch than a traditional pie, brings cookies/pies to the realm of foods available in pouch form. It’s like a dessert hot pocket that isn’t filled with boiling hot lava, but instead is full of love and awesomeness. Definitely give this recipe a shot! Don’t have a kitchen?
