Bacon Cheddar Muffins!
What They Are:
A warm breakfast muffin filled with cheddar cheese and bacon. Perfect for an early morning meeting with colleagues or a get together with friends!
What You Need:
– 2 cups of flour
– ¾ cup of sugar
– 2 teaspoons of baking powder
– ½ teaspoon of baking soda
– ½ teaspoon salt
– ¾ cup plus 3 tablespoons milk
– 1/3 cup melted butter
– 1 egg
– 1 cup of shredded cheddar cheese
– 7 crumbled crisp slices of bacon
What to Do:
1) Preheat the oven to 350 degrees
2) Mix all of the dry ingredients (flour, sugar, baking powder, baking soda, and salt) in a large bowl together
3) Next, mix in the milk, followed by the butter and egg
4) Add in the cheddar cheese and bacon
5) Mix thoroughly until a muffin-like consistency is reached
6) Spoon into greased muffin or cupcake pans (should make about 12)
7) Bake for 15-20 minutes
8) Allow them to cool briefly, and enjoy!

This week’s eat was a cheddar bacon muffin made by Laura Pisano. It was a welcome treat for an early Sunday morning meeting. When I picked up the muffin, it was still warm ensuring its freshness. The first bite reminded me of a baked potato, but as I took another bite, my mouth was engulfed in a sugary, savory goodness. Before our meeting was over, I made sure to take another muffin so I would have one for later.
