Pumpkin Apple Streusel Muffins: Serving Size 20

Prep time: 25 minutes

Cook time: 23-30 minutes

Ingredients:

(Muffin)

-2 ½ cups flour

-2 cups sugar

-1 tablespoon pumpkin pie spice

-1 teaspoon baking soda

-½ teaspoon salt

-2 eggs, lightly beaten -1 cup canned pumpkin -¾ cup oil

-4 Macintosh apples

(Streusel)

-¼ cup sugar

-2 tablespoons flour

-½ teaspoon ground cinnamon

-4 tablespoons butter

Directions:

1. Peel and cut apples, around ½ inch size chunks, and place to the side.

2. Mix together dry ingredients: flour, sugar, pumpkin pie spice, baking soda and salt

3. In a separate bowl, mix wet ingredients: eggs, pumpkin and oil.

4. Add wet ingredients to the dry until just moistened, then add apples.

5. Fill muffin tray ¾ of the way and place to the side.

6. In a separate bowl, mix your streusel. Combine sugar flour and water, then add butter. This is very difficult, use a fork and mash the butter into small bits coated in the mixture. It should be crumbly.

7. Coat the top of the batter in the streusel. Cook for 30-35 minutes at 350 degrees.
